Why Matter is the thing to check
Apple Home only shows devices that support it. Plenty of popular smart bulbs publish support for Alexa and Google and nothing else - the Wyze Bulb Color and the Feit Electric BR30 on this site are two examples - and those simply will not appear in the Home app however long you look.
Matter changed that. It is a shared standard supported by Apple Home, Google Home and Alexa, so any Matter bulb can be added in the Home app and controlled with Siri. For an Apple household it is now the single most useful word on a smart bulb box, and it has a second benefit: the bulb keeps working if anyone in the house uses a different assistant. The picks

Getting it right in practice
Check the box, not the brand. The same brand can sell Matter and non-Matter versions of similar bulbs. The published specification, not the logo, tells you whether it will show up in Apple Home.
Assign rooms at setup. "Hey Siri, turn off the living room" only works when the bulbs are in the living room in the Home app.
Leave the switch on. A bulb with no power cannot hear Siri. If people reach for the switch out of habit, a smart switch on that circuit fixes it - see smart bulbs vs smart switches.
